Ingredients

  • 4 tbsp butter
  • 1 medium yellow onion, diced small
  • 2 stalks celery, diced small
  • 1 lb waxy potatoes, peeled and cut into 1/2-inch cubes
  • 1.5 lb cooked lobster meat, cut into bite-sized chunks
  • 2 cups heavy cream
  • 1 pinch salt and black pepper to taste

Instructions

    Melt butter in a large pot over medium heat, ~1 minute.

    Add onion and celery. Cook, stirring occasionally, until softened, ~5 minutes.

    Add potatoes and 2 cups water. Bring to a boil, then reduce heat and simmer until potatoes are tender, ~12 minutes.

    Pour in cream and stir to combine. Heat through, ~2 minutes—do not boil.

    Fold in lobster meat gently and warm for 2 minutes. The stew should look rich and golden.
