Ingredients

  • 1 lb cooked lobster meat, chilled
  • ⅓ cup mayonnaise
  • ½ whole lemon (juiced)
  • ¼ cup celery, finely diced
  • 2 tbsp butter
  • 2 whole top-split hot dog buns

Instructions

    Pat lobster meat dry with paper towels. Cut into 1-inch chunks.

    Whisk mayo, lemon juice, and a pinch each of salt and pepper in a bowl.

    Add lobster and celery to the mayo mixture. Fold gently until just combined.

    Heat butter in a skillet over medium heat until foaming, ~90 seconds.

    Place buns cut-side down in the skillet. Toast until golden brown, ~2 minutes.

    Divide lobster filling evenly between the two buns. Serve immediately.
