Ingredients

  • 3 cups unsweetened coconut milk
  • ¾ cup sugar
  • ½ cup cornstarch
  • 3 tbsp cocoa powder, unsweetened
  • ¼ tsp salt
  • ½ tsp vanilla extract

    Whisk together 1.5 cups coconut milk, 0.375 cup sugar, and 0.25 cup cornstarch in a saucepan until smooth.

    Add remaining 1.5 cups coconut milk and whisk until no lumps remain.

    Cook over medium heat, stirring constantly, until thickened and coats the back of a spoon, 8–10 minutes.

    Pour half the mixture into an 8-inch square pan and smooth the top.

    Whisk cocoa powder, remaining 0.375 cup sugar, and salt into the pan remaining on heat.

    Stir in remaining 0.25 cup cornstarch and vanilla extract until smooth, 1–2 minutes.

    Pour chocolate mixture over the coconut layer and smooth to the edges.

    Refrigerate until set, at least 2 hours, then cut into 2-inch squares and serve cold.
