Classic French Crêpes with Nutella & Berries

Ingredients
- 1 cup all-purpose flour
- 2 whole eggs
- 1.25 cups whole milk
- 2 tbsp butter, melted
- ¼ tsp salt
- 1 tbsp sugar
- ½ cup Nutella
- 2 cups fresh berries (strawberries, blueberries, raspberries)
- ½ cup Greek yogurt
- 2 tbsp honey
- 1 tbsp butter for the pan

Whisk flour, eggs, milk, melted butter, salt, and sugar until smooth, 2 minutes.

Let batter rest 15 minutes at room temperature. It should pour like heavy cream.

Heat a 10-inch nonstick skillet over medium-high until a drop of water sizzles, ~60 seconds.

Brush the pan lightly with butter. Pour 1/4 cup batter and immediately tilt to spread thin.

Cook 60-90 seconds until the bottom is pale gold, then flip carefully.

Cook the other side 30 seconds until set. Slide onto a plate. Repeat with remaining batter.

Warm Nutella in microwave 30 seconds until spreadable; stir until smooth.

Lay a crêpe, spread 2 tbsp Nutella on half. Top with berries and a dollop of Greek yogurt.

Fold crêpe in half, then half again. Drizzle honey over top. Serve immediately.
