Ingredients

  • 3 medium ripe bananas, mashed
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • ⅓ cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions

    Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line the bottom with parchment paper.

    In a small bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

    In a large bowl, whisk together mashed bananas, melted butter, sugar, eggs, and vanilla extract until combined.

    Gently fold dry ingredients into wet ingredients until just combined. Do not overmix; a few flour streaks are okay.

    Pour batter into prepared loaf pan and smooth the top.

    Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs.

    Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
