Classic American Potato Salad

Ingredients

  • 2 lbs potatoes (waxy, baby gold or similar)
  • ¾ cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 cup celery
  • ¼ cup red onion
  • 2 tbsp fresh dill or parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Cut potatoes into 1-inch chunks (leave skins on). Bring salted water to boil in a large pot.

    Add potatoes and simmer until a fork pierces easily, 8–10 minutes. Drain and set aside to cool.

    Dice celery into 1/4-inch pieces. Thinly slice red onion. Chop fresh dill.

    Whisk together mayo, vinegar, salt, and pepper in a large bowl until smooth.

    Add cooled potatoes, celery, and red onion. Fold gently until evenly coated.

    Scatter fresh dill over the top. Taste and adjust salt and pepper as needed.

    Chill until ready to serve, or serve at room temperature.
