Ingredients
- 2 lbs potatoes (waxy, baby gold or similar)
- ¾ cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 cup celery
- ¼ cup red onion
- 2 tbsp fresh dill or parsley, chopped
- 1 tsp salt
- ½ tsp black pepper

Cut potatoes into 1-inch chunks (leave skins on). Bring salted water to boil in a large pot.

Add potatoes and simmer until a fork pierces easily, 8–10 minutes. Drain and set aside to cool.

Dice celery into 1/4-inch pieces. Thinly slice red onion. Chop fresh dill.

Whisk together mayo, vinegar, salt, and pepper in a large bowl until smooth.

Add cooled potatoes, celery, and red onion. Fold gently until evenly coated.
