Ingredients

  • 1.5 lb pork shoulder steaks (or pork chops), 1 inch thick
  • 2 whole lime
  • ½ cup orange juice (fresh or bottled)
  • 1 whole red onion, halved
  • 1 whole jalapeño (optional), stemmed
  • ¼ cup fresh cilantro, chopped

Instructions

    Pat pork steaks dry. Season generously with salt and black pepper on both sides.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork steaks 2 minutes per side without moving. They should have a caramelized crust.

    Push pork to the side. Add onion and jalapeño cut-side down; sear 2 minutes until charred.

    Pour in orange juice and juice of both limes. Simmer everything together 4 minutes until sauce thickens.

    Plate pork and onions. Pour pan sauce over top and scatter cilantro on each plate.
