Ingredients
- 1.5 lb pork shoulder steaks (or pork chops), 1 inch thick
- 2 whole lime
- ½ cup orange juice (fresh or bottled)
- 1 whole red onion, halved
- 1 whole jalapeño (optional), stemmed
- ¼ cup fresh cilantro, chopped

Pat pork steaks dry. Season generously with salt and black pepper on both sides.

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.
