Ingredients
- 2 large chicken breasts
- ½ cup orange juice
- 2 whole lime
- ½ cup fresh cilantro
- 15 oz can black beans
- ¼ cup sour cream
- 1 whole red chili
- 2 tbsp olive oil

Season the 2 chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high until shimmering, about 2 minutes.

Add the chicken and cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Transfer to a plate and rest.

In the same skillet, add the remaining 1 tbsp olive oil, the juice of 1 lime, and the 0.5 cup orange juice. Scrape up any browned bits and simmer until slightly thickened, about 3-4 minutes.

Stir in the chopped cilantro and sliced red chili. Return the chicken to the skillet and coat with the sauce.
