Ingredients

  • 2 medium grapefruit halves, segmented and pith removed
  • 2 ripe avocado, pitted and sliced
  • ¾ cup pomegranate seeds
  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 2 tbsp fresh mint or cilantro, chopped

Instructions

  1. 1

Whisk olive oil, lime juice, and honey in a small bowl until the honey dissolves and the dressing emulsifies.

  2. 2

Arrange grapefruit segments and avocado slices on a serving plate or in a bowl.

  3. 3

Scatter pomegranate seeds over the citrus and avocado.

  4. 4

Drizzle the dressing evenly over the salad and toss gently to coat, being careful not to break the avocado.
