Ingredients
- 2 whole avocados, ripe
- 4 cups mixed greens (arugula, spinach, or butter lettuce)
- 1 whole orange, peeled and segmented
- ½ whole grapefruit, peeled and segmented
- 1 whole shallot, sliced thin
- 3 tbsp fresh lime juice
- 3 tbsp olive oil

Heat 1 tbsp olive oil in a small skillet over medium-high. Add shallot slices and cook, stirring often, until golden and crispy, about 5 minutes. Transfer to a paper towel and sprinkle lightly with salt.

Whisk lime juice, 3 tbsp olive oil, and a pinch each of salt and pepper in a small bowl until combined.

Toss greens with half the dressing in a large bowl. Divide between plates and arrange orange and grapefruit segments on top.
