Ingredients
- 4 slices, 3/4-inch thick white bread, day-old (challah or brioche)
- 2 large whole egg
- 3 tbsp granulated sugar, divided
- ½ tsp ground cinnamon
- ½ cup sweet wine (moscatel, cream sherry, or white wine)
- 2 tbsp honey

Heat wine and honey in a small saucepan over medium until simmering, ~3 min. Remove from heat and let cool 2 minutes.

Whisk eggs with 1 tbsp sugar and cinnamon in a shallow bowl until smooth.

Dip bread slices into wine syrup for 1–2 seconds per side—just coat, don't soak.

Dip each syrup-coated slice into egg mixture, coating both sides fully.

Heat olive oil in a 10-inch skillet over medium-high until it shimmers, ~90 sec. Fry bread slices 2–3 minutes per side until golden brown and custard-set inside.

Transfer to a plate, sprinkle with remaining 2 tbsp sugar, and drizzle with leftover wine syrup. Serve warm.
