Ingredients

  • 1.5 cups rotisserie chicken, shredded
  • 2 cups cooked white or brown rice
  • 1 can (15 oz) black beans (canned, drained)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 whole lime (juiced)
  • ¼ cup fresh cilantro, chopped
  • ½ cup cotija cheese or queso fresco, crumbled (optional)

Instructions

    Divide rice between two bowls.
