Ingredients

  • 1.5 lbs beef sirloin or flank steak
  • ½ cup fresh cilantro, chopped
  • 2 whole lime (juiced)
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 whole red onion, sliced thin
  • 1 whole jalapeño, sliced (optional)

Instructions

    Mix cilantro, lime juice, garlic, cumin, and a pinch of salt and pepper in a bowl.

    Pat beef dry and coat both sides with half the cilantro mixture.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear beef 2 minutes per side for medium-rare — don't move it, let the crust form.

    Transfer beef to a cutting board and rest 3 minutes, then slice against the grain.

    Toss sliced red onion and jalapeño with remaining cilantro mixture, then serve alongside beef.
