Ingredients
- ½ lb chorizo, Mexican style, casings removed
- 2 cups white cheddar cheese, shredded
- 1 cup pepper jack cheese, shredded
- 4 oz cream cheese
- 1 can (10 oz) diced tomatoes with green chiles
- 1 whole jalapeño, sliced thin
- 2 tbsp fresh cilantro, chopped

Heat a 10-inch skillet over medium-high heat. Brown chorizo, breaking it apart with a spoon, until no raw pink remains, ~5 minutes.

Drain excess fat if needed, leaving about 1 tbsp. Reduce heat to medium.

Add cream cheese and stir until melted, ~60 seconds. The mixture will look broken; that's normal.

Add white cheddar and pepper jack, stirring constantly, until fully melted and smooth, ~3 minutes.

Stir in the tomatoes and chiles (drain excess liquid if they're very wet). Cook 1 minute to warm through.
