Ingredients
- 1 lb chorizo sausage, casing removed
- 1.5 lbs russet potatoes, diced
- 1 medium yellow onion, diced
- 3 cloves garlic cloves, minced
- 1 whole jalapeño, sliced
- ½ tsp cumin
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup fresh cilantro, chopped
- 1 whole lime

Peel and dice potatoes into 0.5-inch cubes. Dice onion and mince garlic.

Remove casing from chorizo and break into bite-sized crumbles.

Heat a 12-inch skillet over medium-high heat. Add chorizo and cook for 5-7 minutes, breaking it apart, until browned and rendered. Transfer to a plate.

In the same skillet with chorizo fat, add potatoes and onion. Season with salt and pepper. Cook for 12-15 minutes, stirring occasionally, until potatoes are golden and crispy.

Add garlic, jalapeño, and cumin. Cook for 1 minute until fragrant.
