Ingredients

  • 1 lb chorizo sausage, casing removed
  • 1.5 lbs russet potatoes, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 whole jalapeño, sliced
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup fresh cilantro, chopped
  • 1 whole lime

Instructions

    Peel and dice potatoes into 0.5-inch cubes. Dice onion and mince garlic.

    Remove casing from chorizo and break into bite-sized crumbles.

    Heat a 12-inch skillet over medium-high heat. Add chorizo and cook for 5-7 minutes, breaking it apart, until browned and rendered. Transfer to a plate.

    In the same skillet with chorizo fat, add potatoes and onion. Season with salt and pepper. Cook for 12-15 minutes, stirring occasionally, until potatoes are golden and crispy.

    Add garlic, jalapeño, and cumin. Cook for 1 minute until fragrant.

    Return chorizo to skillet and stir to combine. Cook for 2 minutes to heat through.

    Remove from heat. Squeeze lime juice over the dish and garnish with fresh cilantro.
