Ingredients
- 8 oz chorizo (Mexican-style, fresh)
- 4 whole eggs
- 4 whole corn or flour tortillas
- ½ cup sharp cheddar, shredded
- 1 pinch salt and pepper
- ½ tbsp olive oil

Remove chorizo from casing. Heat oil in a 10-inch skillet over medium-high.

Crumble chorizo into the pan, breaking it apart with a spoon as it cooks, ~6 minutes until browned and edges crisp.

Transfer chorizo to a plate. Pour off all but 1 tbsp fat from the skillet, return to medium.

Crack eggs into the skillet and stir gently until whites set but yolks stay soft, ~3 minutes.

Return chorizo to pan, sprinkle cheese over eggs, remove from heat.
