Ingredients

  • 8 oz dark chocolate, chopped
  • ½ cup heavy cream
  • 1 tbsp butter
  • ½ tsp vanilla extract
  • ⅛ tsp salt
  • ½ cup unsweetened cocoa powder (for rolling)

Instructions

    Heat cream and butter in a small saucepan over medium until steaming, ~2 minutes.

    Pour over chopped chocolate in a bowl. Let sit 1 minute without stirring.

    Stir until smooth and glossy. Add vanilla and salt, then stir until combined.

    Chill mixture until scoopable but not rock-hard, 15–20 minutes.

    Scoop 1-inch portions onto parchment. Chill again for 10 minutes until firm.

    Roll each truffle between your palms into a smooth ball.

    Roll in cocoa powder until fully coated. Store in an airtight container.
