Chocolate Mousse with Raspberry

Ingredients
- 6 oz dark chocolate
- 1.5 cup heavy cream
- 3 large egg whites
- 2 tbsp sugar
- 1 cup raspberries
- ¼ tsp salt

Melt the 6 oz dark chocolate in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat and let cool slightly.

In a large bowl, whip 1 cup of the heavy cream until soft peaks form. Set aside.

In a separate bowl, beat the 3 egg whites with the 2 tbsp sugar and 0.25 tsp salt until stiff peaks form.

Fold the melted chocolate into the whipped cream until just combined. Then gently fold in the egg whites until no streaks remain.

Divide the mousse among 4 serving glasses. Refrigerate for at least 2 hours, until set.

Before serving, whip the remaining 0.5 cup heavy cream until soft peaks. Top each mousse with a dollop of whipped cream and a handful of raspberries.
