Ingredients

  • 6 oz dark chocolate
  • 1.5 cup heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup pomegranate seeds

Instructions

    Melt the 6 oz dark chocolate in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat and let cool slightly.

    In a large bowl, whip 1.5 cups heavy cream with 0.25 cup powdered sugar and 1 tsp vanilla extract until soft peaks form, about 3-4 minutes.

    Gently fold the melted chocolate into the whipped cream in three additions, being careful not to deflate the mixture. The mousse should be uniform in color.

    Spoon the mousse into 4 serving glasses or bowls. Cover and refrigerate until set, at least 2 hours or up to overnight.

    Before serving, top each mousse with 2 tbsp pomegranate seeds. Serve chilled.
