Ingredients

  • 4 oz dark chocolate, chopped
  • ¾ cup heavy cream
  • 2 count large egg whites
  • 2 tbsp granulated sugar
  • ½ tsp vanilla extract

Instructions

    Place chocolate in a heatproof bowl. Microwave in 30-second bursts, stirring between each, until melted and smooth.

    Pour 1/4 cup cream into the melted chocolate, stirring until glossy and combined.

    Whip remaining 1/2 cup cream to stiff peaks using an electric mixer or whisk.

    In a separate bowl, whip egg whites until foamy, then add sugar 1 tbsp at a time and vanilla until stiff, glossy peaks form.

    Fold whipped cream into chocolate mixture in two additions until no streaks remain.

    Gently fold egg white mixture into chocolate in two additions until just combined.

    Divide mousse among 4 glasses or bowls. Serve immediately or chill up to 4 hours.
