Ingredients

  • 6 whole cannoli shells
  • 1.5 cups ricotta cheese
  • ½ cup powdered sugar
  • 1 cup chocolate chips
  • 1 teaspoon vanilla extract

    In a medium bowl, mix the 1.5 cups ricotta, 0.5 cup powdered sugar, and 1 teaspoon vanilla until smooth and creamy, about 2 minutes.

    Spoon the ricotta mixture into a piping bag or a zip-top bag with a corner snipped off. Pipe the filling into each of the 6 cannoli shells, filling from both ends.

    Place the 1 cup chocolate chips in a microwave-safe bowl. Microwave in 30-second bursts, stirring between each, until melted and smooth, about 1 to 2 minutes total.

    Dip one end of each filled cannoli into the melted chocolate, letting the excess drip off. Place on a parchment-lined tray.

    Let the chocolate set for about 10 minutes, until firm. Dust the cannoli with extra powdered sugar before serving.
