  • ¾ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 whole large egg
  • ¼ cup vegetable oil
  • ½ cup peanut butter

    Preheat oven to 350°F. Line a 6-cup muffin tin with paper liners. In a bowl, whisk together 1 cup flour, 0.75 cup sugar, 0.25 cup cocoa, 0.5 tsp baking soda, and 0.25 tsp salt.

    Add 1 egg, 0.25 cup oil, and 0.5 cup water. Stir until just combined—batter will be thin. Fill each liner about 2/3 full.

    Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

    In a bowl, beat 0.5 cup peanut butter with 0.25 cup softened butter (optional) and 1 cup powdered sugar (optional) until smooth. If too thick, add 1-2 tbsp milk (optional) to reach spreading consistency.
