- 3 large eggs
- ½ cup vegetable oil
- 1 cup water
- 1.5 cups heavy cream
- 1 cup cherries

Preheat oven to 350°F. Grease two 9 inch round pans. In a large bowl, combine the 1 box chocolate cake mix, 3 eggs, 0.5 cup vegetable oil, and 1 cup water. Beat until smooth, about 2 minutes.

Divide batter evenly between the prepared pans. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Let cool completely on a wire rack.

In a chilled bowl, whip the 1.5 cups heavy cream until stiff peaks form, about 3-4 minutes. If you like, add 2 tbsp powdered sugar and 1 tsp vanilla extract for sweetness.

Place one cake layer on a plate. Spread half of the whipped cream over it, then scatter half of the 1 cup cherries. Top with the second cake layer, remaining cream, and remaining cherries. Garnish with chocolate shavings if desired.
