Ingredients

  • 1 lb potatoes, peeled
  • 4 large eggs
  • 4 tbsp olive oil
  • 1 pinch to taste salt and black pepper
  • 2 tbsp fresh cilantro or parsley, chopped (optional)

Instructions

    Cut potatoes into thin matchsticks, about 1/8-inch thick.

    Beat eggs in a bowl with salt and pepper until uniform in color.

    Heat 2 tbsp oil in a 10-inch skillet over medium-high until it shimmers.

    Add potatoes and cook, stirring occasionally, until golden and crispy, 8–10 minutes. Transfer to a plate.

    Reduce heat to medium. Add remaining 2 tbsp oil to the skillet.

    Pour beaten eggs into the pan and let sit undisturbed for 30 seconds until edges start to set.

    Scatter crispy potatoes over the eggs. Fold omelette in half and slide onto a plate.

    Garnish with fresh cilantro or parsley if desired. Serve hot.
