Ingredients

  • 1.5 cups rotisserie chicken, shredded
  • ¼ cup mayonnaise
  • 2 tbsp chipotle peppers in adobo, finely chopped
  • 1 whole ripe avocado
  • 2 whole large flour tortillas
  • ¼ cup fresh cilantro, chopped

Instructions

    Stir mayo and chopped chipotle peppers together in a small bowl until well combined.

    Warm tortillas in a dry skillet over medium heat for 30 seconds per side until pliable.

    Slice avocado and halve it. Scoop the flesh into thin slices using a spoon.

    Lay tortillas flat. Spread chipotle mayo on each, then layer chicken, avocado, and cilantro.
