  • 1.5 pounds lamb shoulder, thinly sliced
  • 4 cups napa cabbage, chopped
  • 8 ounces mushrooms, sliced
  • 8 ounces tofu, cubed
  • 8 ounces baby bok choy
  • 1 medium sweet potato, thinly sliced
  • 4 ounces enoki mushrooms
  • ½ cup cilantro, chopped
  • 3 tablespoons sesame paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili oil
  • 2 cloves garlic, minced
  • 2 stalks scallions, sliced

Instructions

    Arrange lamb slices on a platter and chill until ready to serve.

    Prepare all vegetables and tofu; arrange on separate platters for easy access.

    Make dipping sauce by mixing sesame paste, soy sauce, vinegar, chili oil, garlic, and cilantro in small bowls. Set out small sauce dishes for each diner.

    In a large pot, bring stock to a boil. Add star anise, dried chiles, ginger, and garlic.

    Simmer for 10 minutes to infuse flavors. Stir in soy sauce, shaoxing wine, and sesame oil. Season with salt.

    Transfer broth to a hot pot or shallow cooking vessel at the table. Keep on low heat throughout the meal.
