Chinese Fried Dough Sticks

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup water
  • 2 tablespoons vegetable oil
  • 3 cups vegetable oil for frying

Instructions

    In a large bowl, whisk together the 2 cups flour, 1 tablespoon baking powder, and 0.5 teaspoon salt. Make a well in the center.

    Pour the 0.75 cup water and 2 tablespoons vegetable oil into the well. Stir with a wooden spoon until a shaggy dough forms.

    Turn the dough onto a lightly floured surface and knead until smooth, about 5 minutes. Cover with a damp cloth and let rest for 30 minutes.

    On a floured surface, roll the dough into a 12x6 inch rectangle, about 0.25 inch thick. Cut into 1-inch wide strips.

    Stack two strips together and press a chopstick lengthwise down the center to seal them. Repeat with remaining strips.

    Heat the 3 cups oil in a wok or deep skillet to 375°F. Gently stretch each dough stick and slide into the hot oil.

    Fry until golden brown and puffed, turning occasionally, about 2-3 minutes. Drain on paper towels and serve hot.
