Ingredients

  • 1 block (14 oz) silken tofu, chilled
  • ¼ cup dashi or kombu stock, cold
  • 2 tbsp soy sauce
  • ½ tbsp mirin
  • 2 whole scallions, sliced thin
  • ¼ cup bonito flakes (katsuobushi)

Instructions

    Whisk together dashi, soy sauce, and mirin in a small bowl until sugar dissolves.

    Gently slide tofu block into a shallow bowl. Pour the sauce over and around it.

    Top with scallions and bonito flakes — watch them dance as they react to the heat.
