Ingredients

  • 8 oz soba noodles (buckwheat)
  • 3 tbsp soy sauce
  • 1.5 tbsp mirin (sweet rice wine)
  • ½ cup dashi stock (or water with 1 tsp instant dashi powder)
  • 1 medium cucumber
  • 2 stalks scallions

Instructions

    Boil soba in salted water according to package directions, usually 4-5 minutes, until just tender.

    Drain soba in a colander, then rinse under cold running water until completely chilled and no longer sticky.

    Whisk soy sauce, mirin, and dashi in a small bowl until the sugar dissolves. Set the dipping sauce aside.

    Slice cucumber into thin half-moons. Slice scallions on a sharp angle into 1-inch pieces.

    Divide soba between two bowls or arrange on a bamboo mat. Top with cucumber and scallion.

    Pour dipping sauce into small cups. Dip noodles as you eat, or pour sauce over the bowl.
