Ingredients

  • ½ cup small tapioca pearls
  • 1 can (13.5 oz) coconut milk (full-fat canned)
  • ¼ cup palm sugar or granulated sugar
  • 1 whole lime (juiced + zested)
  • 1.5 cups water
  • 2 cups ice

Instructions

    Boil water in a small pot. Add tapioca pearls, stir, and cook for 10 minutes until mostly translucent with a tiny white center.

    Drain pearls into a fine-mesh strainer, then rinse under cold water until chilled and no longer sticky.

    Pour coconut milk and sugar into a bowl, stir until sugar dissolves completely, then add lime juice and zest.

    Fold chilled tapioca pearls into the coconut mixture until coated, then divide among serving bowls.

    Fill each bowl with ice, pour extra coconut syrup on top if you like, and serve immediately.
