Ingredients

  • 1 lb medium shrimp, peeled and deveined
  • 2 medium bell peppers (red and/or yellow), sliced into strips
  • ½ medium yellow onion, sliced into strips
  • 3 tbsp chili crisp oil
  • 1 whole lime (juiced)
  • 8 count flour or corn tortillas, warmed

Instructions

    Heat oven to 425°F. Toss shrimp, peppers, and onion with chili crisp oil, salt, and pepper on a sheet pan.

    Spread in a single layer and roast for 10 minutes until shrimp pink throughout and vegetables blister at the edges.

    Squeeze lime juice over everything and toss gently.

    Serve in warm tortillas with any pan juices spooned over top.
