Ingredients

  • ¾ lb pork shoulder or pork butt, thinly sliced
  • 8 oz long beans or green beans, cut into 2-inch pieces
  • 3 tbsp red curry paste
  • ½ cup coconut milk
  • 1 whole lime (juiced)
  • 1 tbsp chili crisp (or sambal oelek)
  • ¼ cup fresh basil leaves (Thai or Italian)

Instructions

    Heat 1 tbsp oil in a 12-inch skillet over medium-high until shimmering.

    Add pork, spread in a single layer, don't stir for 2 minutes until edges brown.

    Stir, break into smaller pieces, cook 2 more minutes until no pink remains.

    Stir in red curry paste, cook 1 minute until fragrant and the paste darkens.

    Add long beans and coconut milk, toss to coat, simmer 5 minutes until beans are tender-crisp.

    Squeeze lime juice over the top, stir in basil, drizzle with chili crisp, serve immediately.
