Ingredients

  • 1 lb russet potatoes
  • 2 cups vegetable oil for frying
  • 1 teaspoon kosher salt
  • ¾ lb ground beef
  • ½ medium yellow onion, diced
  • 2 cloves garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 cup tomato sauce
  • ½ cup beef broth
  • 1 can (15 oz) kidney beans, drained
  • 1 tablespoon Worcestershire sauce
  • 1 to taste salt and black pepper
  • 1.5 cups sharp cheddar cheese, shredded
  • 2 tablespoons sour cream
  • 1 tablespoon fresh chives, chopped

Instructions

    Cut potatoes into 0.25-inch thick fries. Soak in cold water for 30 minutes to remove excess starch.

    Drain fries and pat completely dry with paper towels.

    Heat a large pot over medium-high heat. Brown ground beef, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat.

    Add diced onion and garlic, cook 2 minutes until fragrant.

    Stir in chili powder and cumin, toast for 1 minute.

    Add tomato sauce, beef broth, beans, and Worcestershire sauce. Simmer 15 minutes until thickened. Season with salt and pepper.

    Heat oil to 350°F in a deep fryer or heavy pot using a thermometer.

    Fry potatoes in batches 4-5 minutes until golden and crispy. Drain on paper towels and season with salt.

    Transfer fries to a serving plate, top with chili, sprinkle cheddar cheese, and garnish with sour cream and chives.
