Ingredients
- 2 pieces chicken breast
- 4 medium potatoes
- 4 cups spinach
- 2 tablespoons olive oil
- 2 tablespoons butter
- ½ cup chicken broth

Peel and chop the 4 potatoes into chunks. Boil in salted water until fork-tender, about 15 minutes. Drain and mash with 1 tbsp butter and a splash of the cooking water; season with salt and pepper.

While potatoes cook, season the 2 chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high. Add chicken and cook until golden and cooked through, about 6 minutes per side. Remove and set aside.

In the same skillet, add the remaining 1 tbsp olive oil and 1 tbsp butter. Add the 4 cups spinach and cook, stirring, until wilted, about 2 minutes. Season with salt and pepper.

Pour the 1/2 cup chicken broth into the skillet, scraping up any browned bits. Simmer until slightly thickened, about 2 minutes. Return the chicken to the pan to coat in the sauce.
