Ingredients

  • ½ lb ground chicken
  • 1 tablespoon, finely chopped sage, fresh
  • ¼ teaspoon garlic powder
  • 4 whole eggs
  • 2 tablespoons milk
  • 2 slices bread, white or whole wheat
  • 2 tablespoons, divided butter

Instructions

  1. 1

Crack the 4 eggs into a small bowl, pour in 2 tablespoons of milk, and whisk with a fork for 15 seconds until the yolks and whites blend together into a uniform pale yellow color.

  2. 2

In a separate small bowl, mix together 0.5 lb ground chicken, 1 tablespoon finely chopped fresh sage, and 0.25 teaspoon garlic powder until the seasonings are evenly distributed throughout the meat.

  3. 3

Place a 10-inch skillet over medium-high heat and add 0.5 tablespoon of butter, letting it melt and slide around the pan until it foams and smells nutty, about 45 seconds.

  4. 4

Divide the sausage mixture into 2 equal portions and gently flatten each one into a 2-inch-wide patty with your hands, then place them both in the hot skillet.

  5. 5

Cook the sausage patties undisturbed for 4 minutes, until the bottom turns golden brown and feels firm when you press the edge with a spatula.

  6. 6

Flip each patty over and cook on the second side for 3 minutes until it is also golden brown and cooked through, then slide them onto a clean plate.

  7. 7

Return the skillet to medium heat and add the remaining 1.5 tablespoons of butter, tilting the pan to coat the bottom evenly as it melts and froths, about 45 seconds.

  8. 8

Pour the egg mixture into the center of the skillet and immediately begin stirring with a rubber spatula, pushing cooked egg from the edges toward the center, for 2 minutes until the eggs are soft and slightly moist but no longer runny.

  9. 9

While the eggs cook, place 2 slices of bread in a toaster and toast them to golden brown, about 2 minutes.

  10. 10

Divide the scrambled eggs evenly between 2 plates, placing them in the center-left portion of each plate.

  11. 11

Place one sausage patty on each plate to the right of the eggs, and lay one piece of toast on the right side of the plate.
