Ingredients

  • 1 lb boneless skinless chicken thighs
  • ½ cup creamy peanut butter
  • ¼ cup coconut milk
  • 1 whole lime (juiced)
  • 1.5 tbsp fish sauce
  • 1 tbsp sriracha
  • 4 pieces store-bought summer rolls

Instructions

    Cut chicken thighs into 1-inch chunks. Thread onto metal or wooden skewers, dividing evenly between 4 skewers.

    In a small bowl, whisk peanut butter, coconut milk, lime juice, fish sauce, and sriracha until smooth.

    Reserve half the sauce for serving. Brush remaining sauce onto skewered chicken, coating all sides.

    Heat oil in a large skillet over medium-high until shimmering. Sear skewers 8–10 minutes total, turning every 2 minutes until edges are charred and chicken cooks through.

    Transfer skewers to a plate. Warm reserved peanut sauce in the same skillet for 30 seconds, stirring.
