Ingredients
- 2 sesame seed buns
- 2 cups cooked chicken breast
- 1 red bell pepper
- 1 red chili pepper
- 1 tomato
- 2 cups mixed greens
- 2 tbsp olive oil
- ½ tsp salt

Slice the red bell pepper into thin strips and mince the red chili (remove seeds for less heat). Slice the tomato into rounds.

Heat 1 tbsp olive oil in a skillet over medium-high. Add the bell pepper and chili, cook until softened and slightly charred, about 5 minutes. Season with salt.

Shred the cooked chicken breast into bite-sized pieces. Add to the skillet with the remaining 1 tbsp olive oil, toss to warm through, about 2 minutes.

Toast the sesame buns in the same skillet or a toaster until golden, about 1-2 minutes.
