Ingredients
- 1 lb chicken breast
- 1 cup panko breadcrumbs
- 1 egg
- ½ cup flour
- 1 lb frozen french fries
- 4 cups coleslaw mix
- ½ cup mayonnaise
- ½ cup vegetable oil
Instructions
- 1
Preheat oven to 425°F. Spread the 1 lb frozen french fries on a baking sheet and bake until golden and crispy, about 20-25 minutes, shaking halfway.
- 2
Cut the 1 lb chicken breast into 1-inch pieces. Set up three bowls: one with 0.5 cup flour, one with 1 beaten egg, and one with 1 cup panko breadcrumbs.
- 3
Heat 0.5 cup vegetable oil in a large skillet over medium-high heat. While oil heats, coat each chicken piece in flour, then egg, then breadcrumbs.
- 4
Fry the chicken in batches, without crowding the pan, until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
- 5
In a large bowl, mix 4 cups coleslaw mix with 0.5 cup mayonnaise. Season with salt and pepper to taste.
- 6
Serve the hot nuggets and fries with the coleslaw on the side.
