Ingredients

  • 1.5 cups cooked rice
  • ¾ lb boneless chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • ¾ cup dashi or chicken broth
  • 2 whole eggs
  • 2 tbsp scallions, sliced

Instructions

    Heat oil in a medium skillet over medium-high. Cut chicken into 1-inch pieces.

    Add chicken and cook, stirring occasionally, until edges brown, ~4 minutes.

    Pour in soy sauce, mirin, sugar, and broth. Stir to combine.

    Crack eggs directly into the simmering liquid. Cover and simmer until egg whites set, ~5 minutes.
