Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 lb onions, divided
  • 2 tbsp ginger-garlic paste
  • ½ cup tomato puree
  • 1.5 tsp ground cumin and coriander
  • 3 tbsp olive oil
  • 1 unit salt and black pepper to taste

Instructions

    Cut chicken into 1.5-inch chunks. Slice half the onions into thin rings; dice the remaining half.

    Heat oil in a large skillet over medium-high. Add sliced onions and cook, stirring often, until golden and soft, ~12 minutes.

    Transfer caramelized onions to a plate. Add chicken to the same skillet and sear until golden on all sides, ~8 minutes.

    Add ginger-garlic paste and cook, stirring constantly, until fragrant, ~90 seconds.

    Stir in cumin, coriander, and tomato puree. Cook for 2 minutes, stirring to coat the chicken.

    Return caramelized onions to the skillet. Add diced raw onions and stir well to combine.

    Reduce heat to medium-low, cover, and simmer until chicken is very tender, ~12 minutes.

    Season with salt and pepper. Serve hot with rice or naan.
