Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 lb onions, divided
- 2 tbsp ginger-garlic paste
- ½ cup tomato puree
- 1.5 tsp ground cumin and coriander
- 3 tbsp olive oil
- 1 unit salt and black pepper to taste

Cut chicken into 1.5-inch chunks. Slice half the onions into thin rings; dice the remaining half.

Heat oil in a large skillet over medium-high. Add sliced onions and cook, stirring often, until golden and soft, ~12 minutes.

Transfer caramelized onions to a plate. Add chicken to the same skillet and sear until golden on all sides, ~8 minutes.

Add ginger-garlic paste and cook, stirring constantly, until fragrant, ~90 seconds.

Stir in cumin, coriander, and tomato puree. Cook for 2 minutes, stirring to coat the chicken.

Return caramelized onions to the skillet. Add diced raw onions and stir well to combine.
