Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ¾ cup water
- 1 can (14 oz) canned diced tomatoes
- 1.5 cups sharp cheddar cheese, shredded
- 1 tsp chili powder

Mix flour, baking powder, and salt in a bowl, then add water and stir until a soft dough forms.

In another bowl, combine diced tomatoes, chili powder, and a pinch of salt.

Heat neutral oil in a deep skillet over medium-high until it shimmers (about 350°F if you have a thermometer).

Divide dough into 8 portions, flatten each into a disk, stuff with 2 tbsp cheese and 1 tbsp tomato filling, seal edges, and shape into a ball.

Carefully slide vetkoek into hot oil in batches. Fry 2–3 minutes per side until deep golden brown, then lift out with a slotted spoon.
