Ingredients
- ½ lb beef steak (sirloin or skirt), thinly sliced
- ½ lb oaxaca or mozzarella cheese, sliced
- 4 whole corn tortillas
- ½ whole yellow onion, thinly sliced
- 1 whole jalapeño, thinly sliced
- 1 whole lime

Heat a skillet over medium-high until very hot, about 90 seconds. Pat the steak dry and season generously with salt and pepper.

Sear the steak 60–90 seconds per side without stirring. Transfer to a plate.

Lay one tortilla flat in the skillet. Layer half the cheese, then steak, onion, jalapeño, and remaining cheese. Top with second tortilla.

Cook 2–3 minutes until the bottom tortilla is golden and crispy, pressing gently with a spatula.

Flip the mulita and cook the other side 1–2 minutes until golden and cheese is fully melted.
