Ingredients

  • 4 links beef sausage links (smoked or breakfast style)
  • 2 tortillas flour tortillas (8-inch)
  • ¾ cup sharp cheddar cheese, shredded
  • ¼ cup pickled jalapeños, sliced
  • 2 tbsp sour cream or crema
  • ½ lime lime (for squeeze)

Instructions

    Heat a skillet over medium-high until a drop of water sizzles on contact.

    Place sausages in the skillet and cook, turning occasionally, until browned and cooked through, ~8 minutes.

    Lay one tortilla in the skillet, scatter half the cheese over it, then top with cooked sausages.

    Fold the tortilla in half, press gently, and cook until the bottom is golden and cheese melts, ~2 minutes.
