Ingredients

  • ½ lb ground beef
  • ¼ cup panko breadcrumbs
  • 1 whole egg
  • 1.5 cup marinara sauce
  • 2 whole sub roll (6–8 inch)
  • ½ cup fresh mozzarella or low-moisture mozzarella, sliced
  • 2 tbsp parmesan, grated
  • 1 tsp Italian seasoning

Instructions

    Mix ground beef, panko, egg, Italian seasoning, salt, and pepper in a bowl until just combined.

    Roll mixture into 12–16 meatballs (1-inch diameter). Heat oil in a large skillet over medium-high.

    Add meatballs and sear without stirring for 2 minutes until golden, then roll and cook 1 more minute.

    Pour marinara over meatballs, reduce heat to medium, and simmer until sauce bubbles gently, ~8 minutes.

    Split rolls and toast face-down in a dry skillet over medium heat until golden, ~2 minutes.

    Pile meatballs and sauce onto each roll, top with mozzarella and parmesan, then broil until cheese melts, ~2 minutes.
