Ingredients

  • 2 cups cooked shredded chicken
  • 4 oz cream cheese
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 8 count flour tortillas (8-inch)
  • 1.5 cups salsa or enchilada sauce
  • ½ cup diced jalapeños or green chiles (fresh or canned)
  • 1 pinch salt and black pepper
  • 1 tbsp olive oil

Instructions

    Preheat oven to 350°F. Lightly oil a 9x13-inch baking dish.

    Mix chicken, cream cheese, 3/4 cup shredded cheese, jalapeños, salt, and pepper in a bowl until evenly combined.

    Warm tortillas in a dry skillet over medium heat, 15 seconds per side, to make them pliable.

    Spoon 3 tbsp chicken filling down the center of each tortilla, then roll tightly and place seam-side down in the baking dish.

    Pour salsa evenly over the roll-ups. Sprinkle remaining 1/4 cup cheese on top.

    Bake uncovered for 20–25 minutes until the edges are bubbling and the cheese on top is melted and light golden.

    Cool for 3–4 minutes. Serve hot, optionally garnished with fresh cilantro or sour cream.
