Ingredients
- 1.5 cans (15 oz each) canned black beans, drained and rinsed
- 2 cups shredded cheddar or Mexican blend cheese
- 8 tortillas flour tortillas (8-inch)
- 1 cup salsa
- 1.5 tsp cumin
- 1 pinch salt and black pepper to taste

Preheat oven to 350°F. Spread 0.5 cup salsa across the bottom of a 9x13-inch baking dish.

Stir black beans, cumin, and salt and pepper together in a bowl until evenly seasoned.

Lay a tortilla flat. Spoon 3 tbsp bean mixture down the center, then top with 1/4 cup cheese.

Roll tortilla tightly, keeping filling inside. Place seam-side down in the prepared baking dish.

Repeat filling and rolling with remaining tortillas until all fit snugly in the dish.

Pour remaining 0.5 cup salsa over the roll-ups. Sprinkle remaining cheese evenly on top.
