Ingredients

  • 2 rolls bolillo rolls or French bread
  • ¾ cup refried beans
  • 1 cup shredded Oaxaca or mozzarella cheese
  • ¼ cup pickled jalapeños, sliced
  • 1 pinch salt and pepper to taste

Instructions

    Position broiler rack 4 inches from heat source and preheat broiler.

    Slice rolls in half lengthwise and arrange cut-side up on a broiler pan.

    Spread 3 tablespoons refried beans on each roll half in an even layer.

    Top each with 1/4 cup shredded cheese and 1 tablespoon jalapeños.

    Broil 2–3 minutes until cheese melts and surface starts to brown.

    Season with salt and pepper. Serve immediately while cheese is still hot.
