- 1.5 lb chicken breast
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup breadcrumbs
- 2 tbsp gochujang
- 2 tbsp honey
- 1 cup shredded mozzarella
- ½ cup ranch dressing

Cut the 1.5 lb chicken breast into 1-inch chunks. In a bowl, soak the chicken in 1 cup buttermilk for 15 minutes while you prep the coating.

In a shallow dish, mix 1 cup flour, 1 cup breadcrumbs, 1 tsp salt, and 1 tsp black pepper. Dredge each chicken piece in the mixture, pressing to coat well.

Heat 1 inch of oil in a large skillet over medium-high. Fry the chicken in batches until golden and cooked through, about 5-6 minutes per batch. Drain on paper towels.

In a large bowl, stir together 2 tbsp gochujang, 2 tbsp honey, and 1 cup shredded mozzarella. Microwave in 30-second bursts, stirring, until the cheese melts into a sauce, about 1 minute total.

Toss the fried chicken in the cheese sauce until fully coated. Serve hot with 0.5 cup ranch dressing for dipping.
