- 2 cups tapioca flour
- ¾ cup milk
- 3 tbsp butter
- 1 large egg
- ½ cup grated parmesan cheese
- ½ tsp salt
- ½ cup powdered sugar
- 2 tbsp milk (for glaze)

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small saucepan, heat 3/4 cup milk and 3 tbsp butter over medium until butter melts and mixture is hot but not boiling, about 3 minutes.

In a bowl, combine 2 cups tapioca flour and 1/2 tsp salt. Pour the hot milk mixture over the flour and stir with a wooden spoon until a sticky dough forms.

Let the dough cool for 5 minutes, then beat in 1 egg and 1/2 cup parmesan until fully incorporated. The dough will be soft and slightly sticky.

Scoop dough into 12 mounds onto the prepared sheet. Bake until puffed and golden, about 20 minutes. Let cool for 10 minutes.

Whisk 1/2 cup powdered sugar with 2 tbsp milk until smooth. Drizzle the glaze over the cooled cheese breads. Let set for 5 minutes before serving.
