Ingredients

  • 2 cups masa harina (corn flour)
  • 1.5 cups warm water
  • ¾ tsp salt
  • ¾ cup refried beans
  • 1 cup shredded mozzarella or quesillo
  • 3 tbsp olive oil
  • 1 whole lime (for serving)

    Mix masa harina, warm water, and salt until dough forms—no lumps, texture like soft play-dough.

    Cover dough with a damp towel and let rest 10 minutes while you prepare filling.

    Wet your hands and press 2 tbsp dough into a thin disc in your palm.

    Add 1 tbsp beans and 2 tbsp cheese in the center; fold edges up and seal.

    Gently flatten into a disc about 1/2-inch thick. Repeat with remaining dough.

    Heat oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Pan-fry pupusas 3 minutes per side until golden brown and crispy edges form.
